Any list of Shreveport’s iconic foods should begin with the Shrimp Buster, a unique take on the fried shrimp po-boy offered by Herby-K’s. Herby-K’s has been run by the same family since 1936, and the shrimp buster has been on the menu since the very beginning. Jumbo shrimp are pounded flat before being fried and stacked, open-faced sandwich style, on buttery French bread. Fans of Louisiana cuisine will also want to try the restaurant’s crawfish etouffee, seafood gumbo and terrific Gulf oysters.
